They are fine to eat but what they will taste like is another question. LOL Your plants last year were probably hybrids so the progeny does not match the parent. Or they cross pollinated and the seedlings are the result of that. Whatever. Try one and see!
The other interesting factoid from this experience is that the seeds survived your composting process. That means your compost is not heating up to high temperatures. That means you should avoid putting in material that is diseased and avoid adding weeds with seeds on them or you may have more than mutant cucumber problems down the road.
Most home compost piles don't get hot enough to kill those kinds of things -- don't worry about it -- but just keep that in mind when you decide what to compost and what to dispose of in the trash.
